Aktive indholdsstoffer i vindruekerner (fenoler) synes faktisk at v\u00e6re endnu mere effektive antioxidanter.<\/p>\n<p>Et studie udf\u00f8rt p\u00e5 University of Illinois, som blev publiceret i maj-nummeret 2007 af <i>Journal of Food Science<\/i> viste, at\u00a0vindruekerne ekstrakt\u00a0har endnu\u00a0st\u00f8rre evne til at konservere k\u00f8d.<\/p>\n<p>I studiet unders\u00f8gte professor M. Susan Brewer og hendes medarbejdere effekten af oregano, rosmarin og to koncentrationer af vindruekerne ekstrakt p\u00e5 kogt, genopvarmet oksek\u00f8d og svinek\u00f8d, som var opbevaret ved 4 grader i otte dage. K\u00f8dpr\u00f8verne blev testet hver anden dag for mark\u00f8rer p\u00e5 oxidation og indikationer p\u00e5, at k\u00f8det var harsk.<\/p>\n<p>\u201dDen h\u00f8jeste koncentration af vindruekerne ekstrakt opn\u00e5ede bedre resultater, end vi ser med de syntetiske midler, og det havde vi bestemt ikke ventet\u201d, siger Dr. Brewer. \u201dSyntetiske konserveringsmidler er trods alt udviklet til at give maksimal effekt, men sommetider kommer Moder Natur med et bedre produkt\u201d.
